Autumn vegetable soup
Ingredients

  •  
  • subheading: Ingredients:
  • 1 tsp olive or sunflower oil or ghee
  • ½ tsp cumin seeds
  • ½ tsp coriander seeds
  • 2 Tbs mung beans
  • 1 clove of garlic
  • 1 tsp fresh ginger root
  • 1 carrot
  • 1 to 2 cups of other vegetables such as beets, green beans, arugula and /or winter squash
  • 4 cups of water
  • 1 tsp salt
  •  
  • subheading: Instructions:
  • 1. Warm the oil in medium-sized saucepan.
  •  
  • 2. Add the cumin and coriander seeds and sauté for 2 to 3 minutes.
  • 3. Stir in mung beans, garlic and ginger and sauté for another 2 to 3 minutes.
  •  
  • 4. Add the vegetables and stir.
  • 5. Add water and bring to a boil.
  •  
  • 6. Reduce to medium heat and cook for ½ hour or more.
  • 7. The longer you cook it, the more tender everything will be.
  •  
  • 8. Add salt, serve and enjoy
