  • 2 15.5 ounce can hominy, rinsed and drained (I use one white and one yellow can of hominy)
  • 5 slices bacon cooked and drained
  • 2 tablespoons bacon drippings
  • ½ cup chopped green onion or regular onion
  • ½ cup chopped sweet green pepper
  • ½ cup chopped celery
  • 1 10 ounce can diced tomatoes with green chilis
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ teaspoon Cajun seasoning
