Baked Winter Squash with tomatoes
Ingredients
  • 1 Winter Squash , peeled, seeded and cut into ½-inch thick slices, about 3 ½ cups
  • ¼ cup Olive Oil , divided use
  • ¼ cup Water
  • 2 medium or 1 large Onion , trimmed, halved from top to bottom, and thinly sliced
  • 2 cloves Garlic , minced
  • 2 cups Tomato , chopped, or 1 28-ounce can of whole tomatoes
  • 2 teaspoons Oregano , or ½ teaspoon dried
  • ⅛ teaspoon Ground Allspice
  • ¼ pound Feta Cheese , crumbled
  • ⅓ cup Pine Nut
  • Extra Virgin Olive Oil , for drizzling
