Raspberry Balsamic and Honey Salmon by Rich Lum

Cooked in a 6 qt IP on HP...pot in pot in two 7.75” loaf pans
Ingredients
- For the Salmon
- ½ cup Raspberry Balsamic Vineagar
- 2 Tablespoons Honey
- Pinch of Red Chili Pepper flakes
- 1 Salmon filet...fresh or frozen...5 to 7 ounces
- For the veggies..( use any veggies you like) I used
- Asparagus
- Red onion
- Cremini mushrooms
- Red and Yellow baby bell peppers
- ¼ cup liquid...I used Sake but water or chicken broth will be fine
- Salt and Pepper
Steps
- Mix the Balsamic and honey together in the first loaf pan
- Add the Salmon and sprinkle the Red Pepper flakes on top...set aside
- Prep your veggies
- Place veggies and ¼ cup of liquid in the second loaf pan season with salt and pepper and cover tightly with foil
- Add 1 cup of water and your trivet to your pot.
- Stack the loaf pans in a plus (+) shape on top of the trivet
- Close and seal your lid
- Set your pot to manual 6 minutes and do a QR when the cook time has ended
