Raspberry Balsamic and Honey Salmon by Rich Lum
Cooked in a 6 qt IP on HP...pot in pot in two 7.75” loaf pans
Ingredients
  • For the Salmon
  •  
  • ½ cup Raspberry Balsamic Vineagar
  • 2 Tablespoons Honey
  • Pinch of Red Chili Pepper flakes
  • 1 Salmon filet...fresh or frozen...5 to 7 ounces
  •  
  • For the veggies..( use any veggies you like) I used
  • Asparagus
  • Red onion
  • Cremini mushrooms
  • Red and Yellow baby bell peppers
  • ¼ cup liquid...I used Sake but water or chicken broth will be fine
  • Salt and Pepper
Steps
  1. Mix the Balsamic and honey together in the first loaf pan
  2. Add the Salmon and sprinkle the Red Pepper flakes on top...set aside
  3. Prep your veggies
  4. Place veggies and ¼ cup of liquid in the second loaf pan season with salt and pepper and cover tightly with foil
  5. Add 1 cup of water and your trivet to your pot.
  6. Stack the loaf pans in a plus (+) shape on top of the trivet
  7. Close and seal your lid
  8. Set your pot to manual 6 minutes and do a QR when the cook time has ended
Notes
  • Chili pepper flakes are optional
