Spinach and Cheese Manicotti
Ingredients
  • 1 (15-ounce) container part-skim ricotta cheese (I like Polly-O)
  • 2 cups shredded part-skim mozzarella cheese
  • ¼ cup freshly grated Pecorino Romano cheese (I like Locatelli)
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed of excess moisture
  • 2 Tbsp. minced fresh parsley, plus more for garnish
  • 1 large egg, lightly beaten
  • ¼ tsp. kosher salt
  • Freshly ground black pepper
  • 14 manicotti shells (8 ounces) (I like Barilla)
  • 4 cups store-bought marinara sauce
