Rhubarb Custard Bars
Ingredients

  • 1 cup oat flour (CO-be sure to use gluten free if necessary) or almond flour (S)
  • 3 T xylitol or other sweetener that measures like sugar
  • ¼ cup salted butter, cold and cut into chunks

  • ½ cup heavy whipping cream
  • 2 small eggs
  • 3 T oat flour (CO-be sure to use gluten free if necessary) or almond flour (S)
  • Dash of vanilla extract
  • Pinch of salt
  • 2 T Truvia (or 1 T THM Super Sweet Blend), or more to taste (I like mine tart)
  • 4 cups chopped fresh rhubarb
