Herbed Beans with Rotisserie Chicken
Susie's recipe calls for preserved lemon and black garlic which can be hard for people to find. Please don't let that stop you from making your own version with what you have on hand. Grated fresh lemon peel and garlic can both work. Use a smaller quantity of fresh garlic and temper it for a moment or two in lemon juice. You may need to add a bit more oil or a grating of cheese for balance, but trust yourself and taste as you go, and you will find your perfect sauce.
Ingredients
  • 1 small preserved lemon, halved and seeds discarded
  • 1 small black garlic bulb, skin discarded
  • 1 handful cilantro or flat-leaf parsley
  • 3 Tbsp. extra-virgin olive oil
  • Juice of ½ lemon
  • 1 pinch of hot pepper flakes
  • 2 cans (15oz/425g each) white beans, chickpeas, or borlotti beans, drained and rinsed
  • 1 (2lb/900g) rotisserie chicken of your choice, carved into 8 pieces or coarsely sliced
  • Cilantro sprigs, for serving
