Thick slices of sweet potato covered in cheese, chicken, onions, scallion, and BBQ sauce

Ingredients
  • 1 peeled sweet potato, sliced to desired thickness
  • Shredded cheese, like sharp cheddar
  • Cooked chicken, chopped or shredded
  • Salt, pepper, smoked paprika, a bit of chili powder, and seasoned salt
  • Chopped red onion
  • Chopped scallion and cilantro (garnish)
  • Bbq sauce
Steps
  1. Toss potatoes in some oil, then sprinkle with all the spices on both sides.
  2. Mix chicken w a light coating of BBQ sauce.
  3. Fry them in a covered pan, turning once, with some water. Or you can just bake them.
  4. When tender, layer in a flat layer in a foil covered sheet pan. Then layer some cheese, then chicken, a little more cheese, then chopped onion.
  5. Bake at 350 to 400 until cheese is melted, 15 to 20 minutes (or more, just watch cheese doesn't burn.
  6. Carefully remove pan. Put foil sheet on a plate. Top with scallions, cilantro, and a few dots of extra sauce or sour cream if you want.
