Bacon, Egg and Cheese Fried Rice
Ingredients

  • 1¼ cups chopped scallions
  • Kosher salt and black pepper
  • 2 tablespoons minced garlic
  • 1 tablespoon peeled minced ginger
  • 4 large eggs
  • ½ cup freshly grated Parmigiano-Reggiano
  • 4 cups cooked and cooled rice (such as jasmine or basmati), preferably day-old
  • 1 tablespoon low-sodium soy sauce
  • ½ cup thawed frozen peas (optional)
  • Hot sauce, for serving
