Crustless Spinach Quiche

1 clove garlic minced

1 10oz. pkg. fresh spinach roughly chopped

6 large eggs beaten

¼ cup sour cream

½ cup milk 2% or whole

¼ teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ cups feta cheese

1 cup shredded mozzarella cheese

2 tablespoons shaved Parmesan cheese

¼ teaspoon smoked paprika
