A family favorite growing up. I couldn't get enough of my moms meatloaf. We don't let our meatloaf cook in a loaf pan or pan anymore, I use a broiler pan instead. With diabetes running rampant in my family I have taken alot of the grease out of our diets. We still eat the same way that I have grew up eating but alot more healthier.

Ingredients
- 1 pound ground hamburger
- 1 pan of homemade biscuits
- 1 small green bell pepper, diced
- 1 whole egg
- 3 tablespoons sage
- 1 large onion
- 1 can (4 ounce) tomato Sauce*
- ⅛ teaspoon ground black pepper
- Black pepper to sprinkle on top.

- 2 cups self-rising flour
- ⅓ cup vegetable oil
- 1¼ cup water
- ½ tablespoon Crisco vegetable shortening*
Steps

- Preheat oven to 350° F. Grease pan or cookie sheet with Crisco vegetable shortening.
- Drop biscuit dough by large cookie scoop, leveled, onto cookie sheet, spacing evenly. It’s OK if there is a little space between the dough-it will expand as it’s cooked. Makes 12 biscuits.
- Preheat oven to 350°F.
- In a large mixing bowl combine hamburger, bread, black pepper, egg, sage and onion in mixing bowl.
- Shape mixture into loaf or balls* (see notes below) & place onto broiler pan. Pour the can of tomato sauce and sprinkle black pepper on top of loaf or balls.
- Bake 1 hour and 10 minutes in a 350°F oven. Let stand 5 minutes before slicing. Serve hot. Makes 6 servings.
Notes
- *I don't use spray anymore, always made my mom's biscuits stick to pan and gave it a funny taste. I've went back to the way she use to make it, putting ½ tablespoon of Crisco in pan and melt, then spread around with paper towel.
- *When shaping mixture into balls, use a ½ cup measuring cup. You will get 6 servings of meatloaf.
- *Instead of using tomato sauce you can use ketchup. My mom didn't like ketchup on her meatloaf.
- *When making the meatloaf balls bake in a cupcake pan with holes punched in to let the grease drain through.
