Ingredients
  • 2 to 3 Tbsp. coconut oil
  •  
  • 1 small onion, diced
  •  
  • 2 cloves garlic, minced
  •  
  • ½ green and/or red peppers, diced
  •  
  • 1 Tbsp. oregano
  •  
  • 2 Tbsp. tomato paste
  •  
  • 1 ½ tsp. salt
  •  
  • 2 cups Jasmine rice, rinsed
  •  
  • 2 ¼  cups chicken stock
Steps
  1. Choose Saute and cook onions and garlic in coconut oil until translucent. Add peppers, cook for 1 minute. Add oregano, tomato paste and stir for 1 to 2 minutes. Add rice and stir around for 2 minutes. Pour chicken stock into pot, stir. Process on high for 15 minutes, NPR.
  2. Or if using regular long grain rice, choose Rice button for 10  minutes (default), NPR 10 minutes. (This is what I chose)
