  • ⅓ cup warm water, plus more if needed
  • 1 medium garlic clove, grated
  • 3 cups pulled rotisserie chicken
  • 1 medium cucumber, thinly sliced (about 2 ¼ cups)
  • 2 cups roughly chopped kalamata olives
  • 4 cups torn butter lettuce leaves (from 1 head)
  • 1 cup sliced roasted red bell peppers (from 1 [12-oz.] jar)
  • ¼ cup chopped tender fresh herbs (such as parsley and mint)
  • 2 cups broken pita chips
