Episode 32 Chili Cornbread
Ingredients
  • subheading: Chili:
  • yellow onion
  • bell peppers or green chilis (I used 2 red bells and 1 poblano pepper)
  • 2 to 4 - cloves garlic (I forgot the garlic in the video!)
  •  
  • 3 Tablespoons - chili powder (mild or spicy or a mix!)
  • 1 T - chipotle powder (I ground it up from whole dried chipotle peppers)
  • 1 T - cumin
  • 1 teaspoon - cinnamon
  • 1 t - cocoa powder
  • 1 to 2 t - smoked paprika
  • 1 to 2 t - oregano
  •  
  • 3 cans - beans (I used pinto, kidney, & black)
  • 3 cans - diced tomatoes
  • 1 6oz can - tomato paste
  •  
  • Garnish with chopped jalapeños, cilantro, cherry tomatoes, red onion, avocado, sour cream
  • subheading: Sour Cream:
  • 1 cup - plain yogurt
  • 1 t - apple cider vinegar
  • 1 t - lemon juice
  • whisked aquafaba to create a fluffy texture
  • subheading: Cornbread:
  • 1 cup - corn meal
  • 1 c - masa flour (or whole wheat or any other flour you like)
  • 2 t - baking powder
  • 1.25 c - soy milk
  • ½ c - apple sauce
  • jalapeño, seeded & diced
  • 1 c - corn kernels (I used thawed from frozen)
