- 2 cups baby spinach
- 6 oz jar of marinated artichoke hearts, drained
- ¼ cup oven "sun-dried" tomatoes **Store-bought sundried tomatoes will also work
- 1 tbsp toasted pine nuts
- Parmesan cheese, for serving
