Lentils and Brown Rice Blend
Ingredients
  • 4 cups water
  • 2 Tbsp butter
  • ½ cup uncooked red or yellow lentils, rinsed and drained
  • 1 cup uncooked wild rice blend or brown rice, rinsed and drained
  • 2 tsp freshly grated lemon peel
  • 1 medium red onion, thinly sliced
  • 2 cloves garlic, finely chopped
  • ¼ cup chopped fresh parsley
  • ¼ cup dry cooking sherry or dry white wine
  • 1 jar (2.5-ounce) pimientos, undrained
  • season to taste with salt and pepper
