  • 4 (4-ounce) thin chicken breast cutlets
  • Freshly ground black pepper
  • ½ teaspoon unsalted butter
  • Juice of ½ lemon
  • 4 ounces part-skim mozzarella cheese,* thinly sliced
  • Chopped fresh flat-leaf parsley, for garnish
