The Best Mississippi Mud Pie - Kim
In addition to the ingredients below, you'll also need your choice of whipped cream. I use Cocowhip. You could also make your own, but that's on you
Ingredients
  • Cookie Pie Crust Ingredients
  • 9 oz of crunchy chocolate chip cookies (the chef recommends) or graham crackers
  • ⅓ cup melted butter
  •  
  • Chocolate Pudding Ingredients
  • ⅔ cup sugar
  • ¼ cup cocoa powder
  • 3 tbsp cornstarch
  • 2.5 cups milk (I use oat milk, but coconut milk would be really good too)
  • 2 tbsp butter
  • 1 tsp vanilla extract or vanilla bean paste
Steps
  1. subheading: Cookie Pie Crust Instructions:
  2. Preheat oven to 350
  3. Crush the cookies or graham crackers to a fine consistency and add to a bowl
  4. Stir in the melted butter until the consistency is like wet sand
  5. Press the cookies into a 9 inch pie pan. Try to get an even thickness all around
  6. Bake 12 minutes
  7. subheading: Chocolate Pudding Instructions:
  8. In a medium sauce pan, whisk the sugar, cocoa, and cornstarch together until there are no lumps.
  9. Add the milk and whisk to combine
  10. Turn the stove onto medium heat and bring to a simmer, whisking often
  11. Simmer for about 3 minutes until the pudding is starting to thicken and is glossy looking. Pudding will thicken more later, don't worry
  12. Remove from heat and whisk in the butter and vanilla extract/paste
  13. Put in the fridge until it's completely cooled
  14. subheading: Assemble the pie:
  15. Do this once the crust and pudding are completely cooled
  16. Plop the pudding into the pie crust and cover with the whipped cream
  17. You can also put chocolate shavings on top if you like to be extra
  18. Keep in fridge until it's time to serve
