Ingredients
  • Turmeric Kimchi (this makes 2 to 3 tightly packed pint jars)
  • ½ hea d cabbage, grated or sliced thin (save two or three outer leaves to make caps)
  • 2 carrots, grated
  • 3 green onions, chopped (could substitute ⅓ of a small onion)
  • 1 apple, grated
  • 5 cloves of garlic (or less if you don't like it so much), grated or fine chopped
  • 2 Tablespoons fresh turmeric, grated (the fresh stuff is widely available these days, if not substitute ½ Tablespoon turmeric powder)
  • 2 Tablespoons fresh ginger, grated
  • 1 to 2 hot chilis like seranno or jalapeno, chopped small
  • 1.5 Tablespoons salt
  • ½ teaspoon ground pepper
  • As much water as needed to cover
