Instant Pot Beef Stew
Ingredients
  • 2 ½ lbs stew meat or chuck roast cut into bite sized pieces 2 Tbsp olive oil
  • 1 tsp kosher salt
  • 28 oz diced tomatoes
  • small tomato sauce
  • 1 tsp smoked paprika
  • 16 oz. chicken stock or broth
  • 1 lb potatoes, cut into bite sized pieces
  • 1 lb carrots, cut into bite sized pieces
  • 2 large onions, cut into bite sized pieces
  • ½ tsp garlic powder
  • salt and pepper to taste
Steps
  1. Put oil, meat and salt in IP and brown meat on Saute
  2. Once the meat has browned add tomato sauce, diced tomatoes, smoked paprika and chicken stock.
  3. Set timer for 15 minutes on soup mode
  4. Once soup mode cycle has completed - do a quick release
  5. Add potatoes, carrots, onions and garlic powder to the pot
  6. Set timer for 30 minutes on Soup Mode
