Fragrant Coconut Fish with Coriander
Ingredients
  • 2 fish fillets, approx. 150 to 170 g each (I like pink or gold ban snapper, red emperor or due fish)
  • ¼ tsp ground turmeric
  • 1 to 2 tbsp curry powder
  • Pinch salt
  • 2 tsp olive oil
  • ½ medium brown onion, finely diced
  • 1 small fresh red or green chili, finely sliced
  • 1 large clove garlic, crushed
  • 1 tsp fresh ginger, grated
  • ½ cup organic coconut cream
  • 1 juice of a lime
  • 1 bunch coriander leaves
  • Asian greens of choice
  • ½ cauliflower, made into rice
