Paleo Greek Meatballs (Keftedes)
  • 1lb ground beef
  • ¼ cup fresh parsley
  • 6 to 7 large mint leaves finely chopped
  • 1 garlic clove minced
  • 3 scallions finely chopped
  • ½ Tbsp dried oregano
  • Sea salt and black pepper to taste (omit pepper for AIP)
  • ¼ cup arrowroot starch or potato starch (arrowroot for AIP)
  • 2 Tbsp coconut oil
  • Optional: More parsley to garnish
  • subheading: Optional sides:
  • Coconut yogurt or Avocado Tzatziki (recipe below) or Lemon Juice
  • Green Greek Salad (greens, cucumber, Kalamata olives, red onion, avocado with red wine vinegar, fresh dill, dried oregano, and extra-virgin olive oil)
