Bean, Oat, Artichoke burgers
Cherry Mayo
Ingredients
  • subheading: Cherry Mayo's recipe, copied from her previous post in this group:
  • 1 can drained artichoke hearts.
  • 1 cup pinto or kidney or black beans.
  • 1 cup chickpeas
  • 2 med, cubed, roasted sweet potatoes
  • 2 garlic cloves
  • About ½ cup minced onion
  • ½ tsp garlic pwd
  • Salt & pepper to taste
  • (Pulse in a food processor -do the artichoke hearts alone to get well chopped.  Then empty the mix into a large bowl)

  • Add 1 cup cooked, whole grain -quinoa is great, so is brown rice.
  • 2 Tbsp nooch (nutritional yeast)
  • A dash of liquid smoke if you like.
  •  
  • (Mix with you hands until well combined.  Make 8, large patties.  Bake on parchment at 400 F for 22 minutes. Or, These will freeze and  grill after baking if you brush the tops with a high heat oil.  I prefer them baked though as does my really picky 12 yr old.
