Seeded Cauliflower Koftas with Green Hummus
Ingredients
  • 1 cup (260g) hummus
  • 1 cup fresh mint leaves, plus extra to serve
  • 1 cup fresh flat-leaf parsley leaves, plus extra to serve
  • ½ cup (100g) pepitas (pumpkin seed kernels)
  • ½ cup (75g) sunflower seed kernels
  • ¼ cup (35g) sesame seeds
  • 2 tablespoons linseeds
  • 700 grams cauliflower, cut into florets
  • 2 cloves garlic, crushed
  • ¼ cup cumin seeds, toasted, crushed
  • ½ cup (140g) hulled tahini
  • 2 tablespoons psyllium husks
  • 2 tablespoons lemon juice
  • peanut oil, for deep-frying
  • lettuce leaves, cherry truss tomatoes, sliced red onion, cucumber batons, mixed olives and fetta, to serve
