One Pan Baked Chicken and Rice
Ingredients
  • 2 lb (900g) bone-in chicken thighs with the skin removed (4 to 6 thighs)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • ¾ tsp fine salt
  • ½ tsp onion powder
  • ½ tsp ground black pepper
  • ¼ cup extra-virgin olive oil, divided
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 cups (400g) long grain rice, such as Basmati
  • 3 cups (750ml) light chicken stock, at room temperature
  • 1 lemon, sliced into 5mm- (¼-inch-) thick rounds
