Salmon croquettes by Rich Lum

Ingredients
  • 2 salmon filets
  • ¼ cup Chopped onion
  • 2 stalks green onion. Chopped
  • 1 egg
  • Course Panko
  • Salt and pepper
  • 2 tablespoons of cooking oil
Steps
  1. Add 1 cup of water to your pot
  2. Put your trivet in with the fish on top
  3. Season the fish with salt and pepper
  4. Close and seal your pot
  5. Set your pot to manual 3 minutes
  6. When cooking is done do a quick releas. Remove the fish from the pot and let it cool enough to handle
  7. Break up the filets in a bowl. Add the egg, yellow onion and green onion
  8. Add a ½ cup of Panko and mix together with your hands. If the mixture seems to wet add a little more Panko . Add just enough so it will hold together
  9. Divide the mixture into ⅓ cup portions and form into patties
  10. Heat a large skillet over medium heat and add the oil
  11. Put the patties into the skillet . Don't move them around. Cook until golden brown then flip and brown the other side
Notes
  • Tarter sauce
  • Grate ¼ yellow onion into a small bowl, add 2 teaspoons of lemon juice, add 2 to 3 heaping tablespoons of Best Foods mayo, add a little salt and pepper and mix together.
  • Make this early and refrigerate for at least an hour so the flavors blend
