Ingredients
  • 1 tablespoon Extra Virgin Olive Oil (EVOO)
  • one pound or so stew meat or any lean beef you prefer cut into bite sized pieces (we use almost three pounds for our family)
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 4 cups water
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves (fresh or dried work)
  • ½ teaspoon paprika
  • 1 cup baby carrots (or 2 large carrots chopped)
  • 2 Idaho potatoes or a few new potatoes, chopped into bite sized pieces
  • 1½ tablespoon corn starch
  • 1½ tablespoon water
