Ingredients
  • 1 medium head cauliflower, broken into florets (I also cut up all the "good" stem pieces to use as well)
  • 1 medium carrot, shredded (I used a carrot/potato shredder for this, and then cut it into pieces with a knife)
  • ¼ cup chopped celery
  • 2 ½ cups water (I used this amount from a box of chicken broth)
  • 2 teaspoons chicken or 1 vegetable bouillon cube (I didn't use)
  •  
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • ¾ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 cups 2% milk (I used whole milk)
  • 1 cup (4 ounces) shredded cheddar cheese
