- subheading: Pumpkin Apple Soup:
- Pumpkin 1 lb "cubed"
- Onion ½ lb "finely chopped"
- Apples ½ lb "cubed"
- Oil 2 Tbs
- Water 150 ml
- Broth 1 qt
- Curry "powder"
- Cream
- Lemon Juice
- fry Onions until translucent + then add Water + Pumpkin + Apples + simmer until soft (15 min)
- puree in pot with immersion mixer + add broth (until desired consistency) + simmer couple of minutes
- add Curry + Lemon Juice + Cream to taste + garnish w/ herbs
- subheading: Pumpkin Apple Leek Soup:
- Pumpkin 2 cup "cubed"
- Onion 1 "finely chopped"
- Garlic "clove" 1 "finely chopped"
- Apple 1 "finely chopped"
- Leek 1 "finely chopped"
- Celery 2 optional
- Broth 4 cup
- Curry "powder" 1 tsp
- Cream 1cup or Soy Milk "optional"
- Honey 2 to 3 Tbs optional
- Butter to saute Salt + Pepper to taste
- fry Onions + Garlic + Leek + Apple in Butter + stir in Curry + simmer for 1 minute + add Pumpkin + Broth
- boil + stir occasionally + reduce heat + simmer until ingredients are tender + puree in pot with immersion mixer + stir in cream + add Salt/Pepper + Garnish w/ fresh Apple wedges + drizzle a bit of cream over top
