  1. subheading: Pumpkin Apple Soup:
  2. Pumpkin                  1 lb             "cubed"
  3. Onion                       ½ lb            "finely chopped"
  4. Apples                      ½ lb             "cubed"
  5. Oil                             2 Tbs
  6. Water                       150 ml
  7. Broth                        1 qt
  8. Curry  "powder"
  9. Cream
  10. Lemon Juice
  11. fry Onions until translucent + then add Water + Pumpkin + Apples + simmer until soft  (15 min)
  12. puree in pot with immersion mixer + add broth (until desired consistency) + simmer couple of minutes
  13. add Curry + Lemon Juice + Cream to taste + garnish w/ herbs
  14. subheading: Pumpkin Apple Leek Soup:
  15. Pumpkin                  2 cup          "cubed"
  16. Onion                       1                 "finely chopped"
  17. Garlic   "clove"         1                 "finely chopped"
  18. Apple                        1                 "finely chopped"
  19. Leek                          1                 "finely chopped"
  20. Celery                        2                 optional
  21. Broth                        4 cup
  22. Curry  "powder"      1 tsp
  23. Cream                       1cup     or  Soy Milk   "optional"
  24. Honey                       2 to 3 Tbs       optional
  25. Butter                        to saute    Salt + Pepper    to taste
  26. fry Onions + Garlic + Leek + Apple in Butter + stir in Curry + simmer for 1 minute + add Pumpkin + Broth
  27. boil + stir occasionally + reduce heat + simmer until ingredients are tender + puree in pot with immersion mixer + stir in cream + add Salt/Pepper + Garnish w/ fresh Apple wedges + drizzle a bit of cream over top
