Ingredients
  • 4 Tablespoons unsalted butter (½ stick)
  • ¼ cup all-purpose flour
  • 1 cup onion, chopped
  • ½ cup green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 ½ cups chicken broth
  • salt and pepper, to taste
  • 1 Tablespoon Cajun seasoning (Tony Chachere's, Zatarain's)
  • 1 pound Louisiana crawfish tails, with fat
  • sliced green onions, garnish
  • cooked rice
