Creamed Chipped Beef On Toast aka Shit on a Shingle

Ingredients
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • 1½ cups warm milk
  • 1-8 oz. jar dried beef
  • 1 pinch cayenne pepper
  • 8 slices of dry toast
Steps
  1. In a medium saucepan over low heat, melt butter then whisk in flour all at once to form a roux.
  2. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened.
  3. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.
  4. Salt and pepper to taste
Notes
  • Soak beef in water overnight to remove some of its excess.
  • If pressed for time you can rinse beef under cold water to remove excess salt.
