Instant Pot Italian Chicken Soup
Ingredients
  • 8 bone-in chicken thighs (about 2-½ lbs), skin removed
  • Salt and freshly ground black pepper

  • 1 small onion, chopped
  • 3 stalks celery, cut into ½-inch pieces
  • 3 carrots, peeled and cut into ½-inch pieces
  • 4 cloves garlic, minced
  • 5 cups low-sodium chicken broth, divided
  • 1 cup ditalini pasta
  • 1 cup diced tomatoes, drained
  • 8 cups roughly chopped escarole (see notes for substitutions)
  • Chopped parsley
  • Grated Parmesan cheese
