Quinoa-Stuffed Acorn Squash
Ingredients
  • 4 small acorn squash (about 4 ½ lbs.)
  • 3 tbsp. olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 c. mixed-color quinoa
  • 2 tsp. fresh thyme leaves
  • ⅓ c. dried cranberries
  • 1 small bunch Swiss chard, stems discarded, leaves roughly chopped (about 6 cups)
  • Crumbled feta cheese, for serving
