Ingredients
- 1 lb. Casserole Beans
- Frozen pkg. Seasoning Blend Vegetables
- 2 Carrots, diced
- Smoked Turkey Leg (or Ham Hock)
- Spices: Salt, Pepper, Dried Parsley, Thyme, Marjoram, Tarragon and Sage
- 3 lbs. Chicken Broth
Steps
- Brine beans overnight in salt water.
- The next day, thoroughly rinse the beans and put back in the clean pot.
- In the pot, place a smoked turkey leg (or ham hock), your favorite aromatic vegetables (frozen pkg. seasoning blend-onions, celery, red & green peppers), and diced carrots.
- Season it with salt, pepper, dried parsley, thyme, marjoram, tarragon and sage.
- Add 3 lbs. of chicken broth.
- Add water to cover beans by about half an inch.
- Bring to a boil and then lower to a simmer.
- Cook for about 2 hours or until beans are tender, stirring occasionally.
- Remove the meat, shred it and add it back in.
