Smoked Turkey Bean Soup
Ingredients
  • 1 lb. Casserole Beans
  • Frozen pkg. Seasoning Blend Vegetables
  • 2 Carrots, diced
  • Smoked Turkey Leg (or Ham Hock)
  • Spices: Salt, Pepper, Dried Parsley, Thyme, Marjoram, Tarragon and Sage
  • 3 lbs. Chicken Broth
Steps
  1. Brine beans overnight in salt water.
  2. The next day, thoroughly rinse the beans and put back in the clean pot.
  3. In the pot, place a smoked turkey leg (or ham hock), your favorite aromatic vegetables (frozen pkg. seasoning blend-onions, celery, red & green peppers), and diced carrots.
  4. Season it with salt, pepper, dried parsley, thyme, marjoram, tarragon and sage.
  5. Add 3 lbs. of chicken broth.
  6. Add water to cover beans by about half an inch.
  7. Bring to a boil and then lower to a simmer.
  8. Cook for about 2 hours or until beans are tender, stirring occasionally.
  9. Remove the meat, shred it and add it back in.
