Gingerbread Sandwich Cookies (Grain Free and Low Carb)
Ingredients

  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 Tbsp fresh ground ginger
  • 1 large egg
  • 1 Tbsp unsulphered blackstrap molasses
  • 6 tablespoons unsalted butter, melted (or ghee or coconut oil)

  • 8 oz. cream cheese, softened
  • 1 ½ cups heavy cream
  • ¼ to ½ cup powdered sweetener (sweeten to taste) or honey for Primal
  • 1 ½ tsp vanilla extract
