Slow Cooker Creamy Alfredo Lasagna Soup

- 1 cup white onion, diced
- 4 cloves garlic, minced
- 2 tsp. Italian seasoning
- 1 tsp. salt
- ½ tsp. black pepper
- ¼ tsp. crushed red pepper flakes, optional, for heat
- 3 cups chicken stock
- 1 jar Alfredo sauce
- 2 to 3 boneless, skinless chicken breasts, about 1 pound or ground beef
- ½ cup roasted or sundried tomatoes, or chopped
- 1 cup heavy cream omit if using Alfredo
- 2 Tbsp. cornstarch
- 4 cups fresh spinach
- 8 oz. broken lasagna noodles, noodles will cook in the crock pot
- shredded parmesan cheese and fresh parsley for serving
