  • For the Dough:
  • 1 1/4 cup all purpose flour
  • 1 1/4 sticks unsalted butter, cut into cubes, cold
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon white wine vinegar
  • 5-6 tablespoons ice water
  • For the Toppings:
  • 2 zucchinis, sliced 1/8" thick*
  • 8 ounces plain creamy goat cheese, such as Montrachet, at room-temperature*
  • 1 teaspoon fresh thyme leaves, minced
  • 1/4 teaspoon grated lemon zest
  • olive oil as needed
