Grilled Bok Choy with Miso Butter
Ingredients
  • 1½ pounds baby bok choy (about 6 heads)
  • 3 tbsp butter, at room temperature
  • 3 tbsp white or yellow miso paste
  • ½ tbsp garlic, minced
  • ½ tbsp soy sauce
  • Pinch of salt & pepper
Steps
  1. Preheat grill.
  2. Halve the stalks lengthwise.
  3. Rinse the leaves and stalks well, then pat dry to remove any excess water.
  4. In a small bowl, mix together the other ingredients with a fork until well combined. Set aside.
  5. Put the bok choy stalks in a large bowl.
  6. Using your hands (or a fork), coat the bok choy with the miso butter.
  7. Arrange the bok choy, cut side down, on the grill grate.
  8. Close the lid and grill for about 3 to 4 minutes, until golden brown on the underside.
  9. Turn the bok choy with tongs, re-cover, and grill for 3 to 4 minutes more, until golden and crisp-tender.
  10. Remove from grill and put back in the bowl and toss for a little extra coating
  11. Serve immediately.
