  • olive oil or coconut oil cooking spray
  • 1 ¼ cups whole wheat pastry flour (I did not test this with regular whole wheat flour, it would definitely have a different texture)
  • ¾ cup cornmeal
  • 3 tbs raw sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup unsweetened vanilla almond milk
  • ¼ cup melted coconut oil
  • 1 egg, beaten
