Brown Butter-Cardamom Spitzbuben Cookies
German for "cheeky boys," these traditional Bavarian Christmas cookies get a tantalizing upgrade with the addition of brown butter and the robust, citrusy flavor of freshly ground cardamom. Paired with your favorite jam, the finished cookies will stop your guests in their snowy tracks.
Ingredients
  • 1 ½ cups unsalted butter (12 ounces)
  • 3 ¾ cups all-purpose flour (about 16 ounces)
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground ginger
  • 1 vanilla bean or 1 teaspoon vanilla bean paste
  • 1 ½ cups packed light brown sugar
  • 1 large egg, at room temperature
  • 2 large egg yolks, at room temperature
  • Powdered sugar, for dusting
  • ¾ cup apricot, cherry, blueberry, or seedless raspberry jam, stirred until smooth
