Ingredients
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoon ¼ stick butter
  • 1 large shallot diced
  • 8 oz. Baby Bella mushrooms sliced ( roughly 2 cups)
  • Other vegetables - Peas and chopped carrots - 1 cup optional
  • 1 Tablespoon of freshly minced garlic
  • 1 cup of Arborio rice make sure you use Arborio rice for a risotto
  • 2.5 cups of vegetable broth or water
  • ½ cup of good drinkable white wine
  • Salt and ground black pepper - per taste
  • ½ teaspoon of Italian seasoning
  • ½ cup of aged Parmesan cheese -grated
  • 1 Tablespoon of chopped fresh or dried parsley or chives
  • 1 Tablespoon of white or black truffle oil
