Ingredients
- 1 poblano pepper, roasted and peeled
- 1 large onion
- 1 Tbsp butter
- 4 eggs
- 1 cup shredded cheese (yellow or mix)
- ½ cup sour cream
- Salt and pepper to taste
Steps
- Chop onion and pepper into pea-sized pieces and saute in butter.
- Beat eggs, sour cream, salt, and pepper together.
- Put onions and peppers in small casserole dish, a loaf pan works too. Then drizzle light tasting olive oil (my preference) over them, about a tablespoon.
- Then pour in half of egg mixture, then half of the cheese. Add the other half of the egg mixture but not the last of the cheese yet.
- Bake at 375 for 25 min., then add the remaining cheese and cook an additional 5 minutes.
