Low Glycemic Chile Rellano Casserole
Low Glycemic, low carb, side dish, Casserole

Ingredients
  • 1 poblano pepper, roasted and peeled
  • 1 large onion
  • 1 Tbsp butter
  • 4 eggs
  • 1 cup shredded cheese (yellow or mix)
  • ½ cup sour cream
  • Salt and pepper to taste
Steps
  1. Chop onion and pepper into pea-sized pieces and saute in butter.
  2. Beat eggs, sour cream, salt, and pepper together.
  3. Put onions and peppers in small casserole dish, a loaf pan works too. Then drizzle light tasting olive oil (my preference) over them, about a tablespoon.
  4. Then pour in half of egg mixture, then half of the cheese. Add the other half of the egg mixture but not the last of the cheese yet.
  5. Bake at 375 for 25 min., then add the remaining cheese and cook an additional 5 minutes.
