  • 500g pork belly, skin removed and cut into large chunks
  • 2 duck legs
  • 1 large onion, thinly sliced
  • 1 bay leaf
  • 2 garlic cloves, finely chopped
  • ½ tbsp wholegrain mustard
  • 1 apple, diced
  • small handful flat-leaf parsley, finely chopped
  • toast and mixed salad, to serve
