  • 1 teaspoon freshly ground black pepper
  • 4 bone-in, skin-on chicken thighs (about 2 pounds total)
  • 1 tablespoon plus 1 ½ teaspoons olive oil
  • ½ cup dry white wine, such as sauvignon blanc
  • ⅓ cup low-sodium soy sauce
  • Finely chopped fresh cilantro or chives, for garnish
