  • 8 ounces rigatoni pasta - Or your bite-sized pasta of choice -- whole wheat or gluten free are both fine, as well.
  • 1 cup raw cashews - soaked in hot water for 10 minutes
  • ½ cup water
  • 3 cloves garlic
  • 2 tablespoons lemon juice
  • 12 ounce bag frozen spinach - thawed and drained
  • 1 14 ounce can quartered artichoke hearts - drained
  • salt and pepper - to taste
