Rotisserie Chicken with Crispy Farro Salad
Ingredients
  • 2 cups farro, fully cooked and drained
  • 1 tablespoon olive oil

  • ½ teaspoon paprika
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1 teaspoon agave nectar
  • 1 tablespoon shallot, finely minced
  • ¼ cup olive oil
  • 3 cups frisée lettuce, or other leafy green
  • 1 avocado, quartered and thinly sliced
  • 1 orange or tangerine, segmented
  • ¼ red onion, thinly sliced
  • 1 store-bought rotisserie chicken, meat removed and shredded
