Kim’s Smoked Sweet n Spicy Almonds

Ingredients
  • 2 lbs almonds, pecans or mixed nuts
  • 2 egg whites, or ¼ cup carton egg whites
  • 2 T Bourbon, or water
  • ½ cup sugar
  • ⅓ cup brown sugar
  • 2 T kosher salt, or 1 T regular sea salt
  • 1 to 2 tsp Chipotle powder
  • ½ to 1 tsp Cayenne pepper
  • 2 tsp smoked paprika
  • 2 tsp cinnamon
  • ½ tsp Trader Joe’s Pumpkin Pie Spice, or nutmeg
  • 1 tsp ground black pepper
  • 2 T melted butter
Steps
  1. Start the Traeger.  Leave on Smoke mode.
  2. Line a cookie sheet or disposable drip pan with parchment paper.
  3. In a large bowl, whisk the egg whites until frothy. Add the Bourbon or water and stir.
  4. Add the nuts to the egg mixture and stir to coat the nuts. Let sit for 10 minutes.
  5. In a medium bowl, whisk together the sugars and spices.
  6. Add the spices to the nuts and stir thoroughly.  Add the butter and stir again.
  7. Spread the nuts in a single layer on the parchment paper.
  8. Smoke for one hour, stirring every 15 to 20 minutes.  Turn up to 325 for 10 minutes to brown the nuts a bit, if needed.
