  • 1 medium onion, chopped
  • ⅔ c chopped celery

  • 1 garlic clove, minced
  • 1 pound 93% lean ground beef
  • ¾ tsp kosher salt
  • Freshly ground black pepper
  • ¼ c dry white wine
  • ½ c fat free milk
  • 1 pound potato gnocchi
  • ⅛ tsp grated nutmeg
  • 2 ½ cup canned crushed tomatoes
  • 1 bay leaf
  • 6 T ricotta cheese
  • 2T chopped fresh parsley or basil
  • Freshly grated Parmesan or Asiago cheese
