Mediterranean Turkey with Wild Rice
Preparation time: 10 minutes-Total time: 3 to 8 hours (slow cooker)
Ingredients
  • 4 large tomatoes, diced
  • ½ cup sliced onion
  • 4 cups diced zucchini
  • ¼ cup chopped fresh parsley
  • 4 cups organic vegetable broth
  • 1 tablespoon minced garlic
  • 2 cups uncooked wild rice
  • 1 tablespoon lemon juice
  • 1 ½ to 2 pounds cubed turkey breast
Steps
  1. Put all ingredients into a slow cooker or crock-pot and cook for 3 to 4 hours on high or 6 to 8 hours on low. Serve hot.
