Creamy Roasted Eggplant Tomato Soup
Ingredients
  • ¼ cup raw cashews, see notes for substitutions
  • 1 lb eggplant, stem removed and diced into 1-inch squares
  • 2 lbs tomatoes , stem removed and diced into 1-inch squares
  • 1 large onion, diced
  • ½ acorn squash cut into wedges .
  • 5 garlic cloves, roughly chopped
  • high heat oil spray
  • 2 cups vegetable broth
  • 8 fresh basil leaves, or 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 to 2 tablespoons white wine vinegar
  • salt & pepper , to taste
